Guacamole

Guacamole

Everyone and their mother seem to have a recipe for guacamole. I’m sure it has something to do with the fact that guac is made up of a few basic ingredients. Not only is it good with chips and quesadillas, but it’s also tasty with fish, beef and chicken.

The key to my recipe (and other versions) is that it’s very freestyle. If you’re not crazy about onion, then don’t add as much. If you don’t like jalapeno. then leave it out. The key is making sure that you’re using ripe avocados and that you can translate your likes and dislikes into the correct proportion of recipe ingredients.

Ingredients:
  1. (2) avocados; mashed
  2. (1/3) red onion; diced
  3. (2) cloves of garlic; minced
  4. (1) tomato; diced (remove the pulp from the interior)
  5. (1) handful of cilantro; chopped
  6. (1) jalapeno (small); minced
  7. Squeeze of lime juice
  8. Salt and pepper

Cooking/Prep Instructions:
  1. Remove avocado from its skin and place in a large mixing bowl. Mashing the avocado with a fork before adding the other ingredients will improve your ability to easily incorporate the other ingredients. If you like your quacamole chunky, then leave some chunks as you’re mashing. If you like your guac on the thin side, then either add a bit more lime juice, or add a touch of purchased or homemade salsa.
  2. Add red onion, garlic, tomato, jalapeno, cilantro, lime juice, salt and pepper to the mixing bowl and fold into the mashed avocado.
  3. Season with additional salt and pepper to taste.

    I completely agree with you that the great thing about making your own guac is the ability to exactly meet your tastes by adjusting the proportions of ingredients. Your guac looks so yummy - pass the chips!
